Hello everyone! Here is the recipe of the week. If you are making ham on this holiday weekend you can use the leftover to make this delicious soup. It also works well with Turkey if that is what your cooking. Either way it is delicious. I found this recipe on a 9 bean soup mix container from Costco, but I added the Ham or the Turkey. :)
Hearty Ham and Bean Soup.

Ingredients
2 TBSP vegetable or olive oil
1 coursely chopped onion
1 clove of garlic, finely minced
1/2 cup of sliced celery
1 cup of Nine Bean Soup Mix
4 cups of chicken stock-I use my own home-made chicken stock.
2 cups of water
1 28 oz can of diced tomatoes. I used fresh.
Salt and Pepper to taste
Chopped up ham or Turkey.
Parmesan cheese to garnish.
Directions
Soak beans overnight in cold water for 12 hours.
Drain before using. In a large saucepan, over medium heat, sauté olive oil, onion, celery and garlic for about 5 minutes, until they are cooked through.
Add the beans, tomatoes, chicken stock, and water.
Add salt and pepper to taste.
Increase heat to high and bring to a boil.
Then reduce heat to medium-low.
Cover pot and simmer for 1 and a half to 2 hours
Stir occasionally.
Ladle into bowls, sprinkle with parmesan cheese before serving.
I usually bake homemade bread as well.
